Watermelon and mint go together like Forrest Gump and chocolate. They were made for each other.
The cool, sweet herbaceousness of the mint adds some much-needed flavor to incredibly refreshing – but relatively bland – watermelon.
This recipe calls for homemade mint syrup. which really allows the mint to shine. While this works perfectly well as juice, it also makes an excellent base for a cocktail.
Vodka works well for a watermelon martini, but we also recommended trying it with mezcal instead, as the smoky flavor from this Mexican spirit really rounds out the flavor.

Ingredients
- 1/4 cup fresh mint leaves
- 1/4 cup granulated sugar
- 5 cups watermelon, peeled and cubed, seeds removed
- 1/4 cup fresh lime juice
- For garnish fresh mint sprigs
Preparation
- In a small pot, bring water to a boil. Add the mint leaves and sugar. Stir until the sugar has dissolved. Transfer to a heatproof container and let chill, uncovered, for about 30 minutes.
- Strain into a bowl and discard the mint leaves. In a blender, combine the mint syrup, watermelon and lime juice. Blend until very smooth and strain into a pitcher.
- Add 2 cups of water and stir. Pour over ice and garnish with a fresh mint sprig. For a delicious cocktail, add vodka or mezcal.
